Cheesecake is a creamy, tasty, and popular dessert (just ask The Golden Girls!). Plus it’s fairly easy to make.
What could be better than that? When you don’t even have to bake it!
Try this No Bake Banana Rum Cheesecake for a mouth-watering dessert that will leave you wanting more.
What You’ll Need:
For the crust:
- 1 ½ cups graham cracker crumbs
- 5 tablespoons melted butter
- 2 tablespoons granulated white sugar
For the filling:
- Two 8-ounce packages cream cheese, softened
- 3/4 cup heavy cream
- 1/2 cup granulated white sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon banana extract
- 1 ounce (2 tablespoons) dark rum
For the topping:
- 4 tablespoons (1/2 stick) butter
- 1/4 cup brown sugar
- 2 ounces (1/4 cup) dark rum
- 2 large bananas, sliced into ¼-inch thick slices

What You’ll Do:
Combine the ingredients for the crust in a medium bowl. Next, press the mixture into the bottom of a 9-inch springform pan (you can also use four 4 ½-inch springform pans). Use a glass to press it down firmly. You will then need to use an electric mixer to beat the ingredients for the filling in a large bowl for 3 minutes (or until smooth).

Scrape all of the filling into the springform pan if you are using a 9-inch springform pan. If you are using separate 4 ½-inch pans, scrape the filling evenly into each of these. Next, chill the filling in the refrigerator for at least 4 hours, and up to 2 days.
Now it’s time for the banana topping! Add 4 tablespoons of butter to a large skillet and heat this with medium heat. Once the butter has melted, add in the brown sugar and stir the mixture. Next, pour in the rum and cook for 3 to 4 minutes, stirring continually.

Add the sliced bananas and cook for another 5 minutes. Be sure to flip the bananas after 2 ½ minutes to cook them evenly. Remove the cheesecake (or cheesecakes) from the pan (or pans). Use a knife to do this, carefully running it along the edges first. Then, gently loosen the spring on the pan.

Finally, spoon the banana topping over the cheesecake and you’re ready to serve it! Yum!
